Papi's almost world famous Chili
1lb ground beef
1lb ground pork
1 1/2 lb carne picada (Kroger sells it)
1 large onion diced
1 green bell pepper diced
1 jalapeño diced
4 cloves garlic chopped
1 can tomato sauce
1 can diced tomatoes
2 cans dark red kidney beans rinsed
1 can black beans rinsed
Cans of beer as needed. Could be one, could be 4
Spices. I make a batch, start with half of it and add as needed to taste
6 tbsp chili powder
4 tbsp instant beef bouillon
4 tbsp ground cumin
2 tsp paprika
2 tsp smoked paprika
4 tsp oregano, Mexican oregano if you have it
4 tsp sugar
1 tsp ground coriander
2 tsp unsweetened cocoa
Hot sauce to taste.
I also use ground red pepper if I don't have any wusses eating.
2 tsp cornmeal
2 tsp flour
Warm water.
Heat a couple tbsp oil in a large stock pot. Add onions and sauté for several minutes until translucent. Add green bell pepper and jalapeño and sauté for several more minutes until tender.
Add the garlic and the meat and brown it up nicely.
Remove from heat and drain meat, return to pot.
Add all cans and half of the spice mix.
Start adding beer until the liquid about an inch above everything. Drink the rest.
Return it all to a boil, then reduce to simmer stirring occasionally.
Taste it somewhere along the way and if you need to add more spice, do so to your taste and liking.
I usually simmer mine for a couple of hours, if I need to add more liquid I use beer. Just before I serve I combine the cornmeal and flour with the water to make a paste and use the to thicken it, if it needs it.
