Ran across this one and gonna have to give it a try.
Start with 2 bowls
In bowl #1 mix:
2 1/2 cups fine ground cornmeal 1/2 cup all purpose flour 1 tbsp baking powder 3/4 tsp baking soda 1/2 tbsp sugar 1/2 tbsp black pepper 1/2 tbsp salt 1/8 tsp cayenne pepper
In bowl #2 mix:
3 eggs lightly beaten 1 1/2 cup of buttermilk 1/2 cup finely chopped vidalia onion 1 tsp jalapeno pepper
mix the contents of each bowl together and whisk until just combined (do not over work)
In a fryer of your choice (cast iron, electric etc) heat oil to 350° keeping it pretty steady.
Drop in small spoonfulls of the mix up to 8 at a time Once they float to the top (fairly quick) rotate them 1/2 turn with tongs to get both sides done (another 30 seconds or so)until golden brown and crisp all around.
Dip from grease and drain on a plate with paper towels on it.
Dig in and slap yo' mama cause deez be sum kinda good eatin.
