I keep seeing all these great looking steaks and just start drooling. I have a gas grill and my only other option is a cast iron skillet.
My biggest problem is that I have to really watch my pennies, so I can't do much experimenting.

I think I remember another time and another place where Paymaster skillet cooked a fine steak. Looked as good as anything you'd get at one of those high fallutin restaurants. Maybe he'll chime in and share that with us.

That gas grill will make a good steak. Heat it up screaming hot, and sear that steak about 2 1/2 minutes per side for medium rare. Paymaster's marinade of 2TBS olive oil, 1 TBS soy sauce, 2ts Montreal steak seasoning, and 1 tsp finely-ground coffee per steak is the deal. Mix it up, rub it on both sides of the steak, pop it in a ziplock bag and let it sit a few hours before grilling.

Its dang good!

Salt and pepper both side of the steak liberally. Heat cast iron skillet on high. Pour a tbsp of olive oil in the pan and let it sizzle and get hot. Brown steak on both sides and finish to desired doneness in a 450 degree oven.

You can do them on a gasser. Just want it hot!!!!!!!!!!! Cast iron skillet does good too. It'll smoke up the house though.
Use this marinade and see what you think.
2 Tablespoons Olive Oil 1 Tablespoon Soy Sauce 2 Teaspoons Montreal Steak Seasoning 1 Teaspoon Espresso Powder/Finely Ground Coffee Mix and rub on both side of one steak. Let sit for at least an hour, more is better.
